Penang's food reputation rests on its hawker centres, the clusters of single-dish specialists where one stall fries char kway teow, another boils Hokkien mee, and a third grills satay, all under one roof or along one street. You table-hop between stalls, order and pay at each one directly, and your food gets brought to your table. A plate or bowl runs RM 6 to RM 12, drinks come from a separate stall, and cash is king.
The format confuses first-timers. Find a table first (one occupied by someone's bag means it is taken, not abandoned). Walk the stalls, order what you want, give them your table number. A separate drinks vendor will come to your table. Pay as you go. Most stalls are cash-only, so bring small notes.
Gurney Drive Hawker Centre
The big covered seafront centre on Persiaran Gurney, and the easiest first stop for visitors. The widest variety under one roof, the most English signage, and the most visitor-friendly setup. Stalls open from around 5pm and run to midnight, with peak crowds after dark. Come early to grab a table before 7pm, or you will be circling.
Order the char kway teow, the Hokkien mee, the oyster omelette (oh chien), and the pasembur. Look for Ah Chui Laksa for a rich, tangy asam laksa, and Song River Cafe for satay and roasted meats. Finish with cendol or ais kacang.

New Lane Hawker Centre (Lorong Baru)
Where locals actually eat. A street lined with stalls, less polished than Gurney Drive, arguably better food, and considerably cheaper. Locals have their favourite stalls they have been patronising for years, and families share tables to order a feast from multiple vendors.
Order the char kway teow, the Hokkien mee, and the oyster omelette. The stall called Hock Kee does a well-regarded char kway teow here, and the chee cheong fun is reliably good. Closed some weeknights, so it pays to check before you make the trip.

Air Itam Market (Pasar Air Itam)
A morning market near Kek Lok Si temple, famous for one dish above all: Air Itam asam laksa. The legendary stalls sell out by early afternoon, so arrive before noon if you want the broth. Pair it with a temple visit and a funicular ride up to Penang Hill in the same morning, as all three sit within minutes of each other.
The market operates as a wet market by day and an evening hawker paradise by night, with two different sets of vendors. The morning shift covers nasi lemak, dim sum, chee cheong fun, and kopi. The evening shift covers char kway teow, Hokkien mee, and economy rice.

Chulia Street Night Hawker Stalls
George Town street stalls that come alive late, perfect for char kway teow, wonton mee, and porridge after the heritage core has quietened down. Conveniently located in the heart of the historic zone, so you do not need to travel far from your guesthouse. A plate here runs RM 6 to RM 8.

How to eat at a hawker centre
Find a table first, then walk the stalls. Order and pay at each stall directly, giving them your table number. Your food arrives at your table. Drinks come from a separate stall vendor who will find you. Ask for prices before ordering, especially for seafood and pasembur, which can vary wildly. Share small portions so you can try more dishes across multiple stalls. Most stalls close one day a week, usually Monday or Tuesday, and that day varies by stall, so a hawker centre never fully shuts but always has gaps.
If you visit one, go to Gurney Drive for orientation. If you visit two, go to New Lane for the real experience. If you visit three, head to Air Itam in the morning for the laksa and the market atmosphere that the other two cannot match.
